Ingredients
You'll Need:
- 3 chicken breasts
- - salt (to taste)
- - pepper (to taste)
- 4 tablespoons basil pesto
- 1 roma tomato (sliced)
- 120 g mozzarella cheese

Preparation
- Preheat oven to 400˚F (200˚C).
- Place chicken breast in a baking dish. Season chicken with salt and pepper, to taste.
- Spread pesto on each chicken breast.
- Layer tomatoes on top of the chicken.
- Top with mozzarella cheese.
- Bake for 40 minutes.
- Enjoy!

"Next time I’ll drop the temp/increase baking time OR cover with foil. The cheese on top of the tomatoes was burnt. However, even with that minor oops, this was a huge hit. I served with angle hair pasta tossed with a bit of pesto and fresh grated parmesan, green salad and crusty, hot bread. Perfect for 2 with 1 breast and pasta left over for hub’s lunch! 😍"

"I made this yummy dish, and it turned out so good! Except it came out watery. I followed the receipt to the T, except I added the shredded mozzarella about 5 Mins before it was done, just so the cheese won’t burn. Any suggestions on why it might have come out watery from the oven? (I also used a ready made Pesto sauce)"

"I used diced garlic tomatoes and it was superb! Will definitely use more mozzarella next time. I cooked it covered with foil for 20 mins and then uncovered the rest of the time which made me add on another 6 minutes to cook time."

"@Nametaken, I think that maybe it had something to do with the pesto sauce. It appears that the dish seemed soupy because the oil from the pesto separated (I can tell by how the liquid looks around the chicken). I haven’t made this yet, but that is my guess."

"This is an awesome, super easy recipe! I do recommend brining the chicken first so it doesn’t dry out, as well as putting the cheese on top in the last 7mins so it doesn’t burn. To brine: Use 4 cups of warm water with 1/4 cup of salt and let the (2) chicken breasts soak for 20-30 mins, rinse off and pat dry and pour pesto on top etc."

"This is sooooooo good, but DO NOT put the cheese on at the beginning or you will have charcoal cheese after the full cooking time. I bake until it’s about 3/4 of the way done and then add the cheese to melt at the end."
